做法:春笋(sǔn )切(qiē )成片后加少许盐(yán )捞(lāo )出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入(rù )少量清水半掩住春笋,盖(gài )上锅盖大火煮开后(hòu )转(zhuǎn )中火(huǒ )。煮到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
