做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入(rù )生姜(jiāng )、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅(guō )盖大火煮开后(hòu )转中火。煮到水快熬(áo )干的(de )时候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上(shàng )锅盖(gài )焖。
