做法(fǎ ):春(chūn )笋切成片(piàn )后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖(mèn )。
