做法:春笋切成(chéng )片后加少许盐捞出后(hòu )用清水(shuǐ )浸泡(pào ),生姜切片(piàn ),葱切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
