做(zuò )法(fǎ ):春笋切成片后加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分(fèn )钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
