做法:春笋(sǔn )切成片(piàn )后(hòu )加少许盐(yán )捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
