做(zuò )法:春笋(sǔn )切成片(piàn )后加少许(xǔ )盐捞出后用清水浸(jìn )泡,生(shēng )姜切(qiē )片,葱切成段。锅(guō )烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转中火。煮到(dào )水快熬干的时候(hòu )加入盐,翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖。
