做法:春笋切成片后加少许(xǔ )盐捞出(chū )后用清水(shuǐ )浸(jìn )泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开(kāi )后转中火(huǒ )。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
