做(zuò )法:春笋切成片(piàn )后加少许盐捞(lāo )出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋(sǔn )、牛(niú )肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快(kuài )熬干的时(shí )候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
