做法(fǎ ):春笋切成片后加少许盐(yán )捞出后用清(qīng )水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒(chǎo )1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅(guō )盖大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
