做法:春(chūn )笋切成片后加(jiā )少许盐捞出后用(yòng )清水(shuǐ )浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉(ròu )片(piàn )、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候(hòu )加入盐,翻炒均匀稍(shāo )收汁时盖(gài )上锅盖焖。
