做法:春笋切成(chéng )片(piàn )后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱(cōng )切成(chéng )段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入(rù )生抽、老(lǎo )抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
