做法:春笋切(qiē )成片(piàn )后(hòu )加少许盐捞出后用清(qīng )水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春(chūn )笋,盖上(shàng )锅(guō )盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
