做法:春笋切成(chéng )片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加(jiā )入生(shēng )抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后(hòu )转中火(huǒ )。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
