做(zuò )法(fǎ ):春笋切成片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬(áo )干的时(shí )候加入(rù )盐,翻炒均(jun1 )匀稍(shāo )收汁时盖上锅(guō )盖焖。
