做法:春笋切(qiē )成片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀(yún ),加入少量清水半掩住(zhù )春笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快(kuài )熬(áo )干的(de )时候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
