做法:春笋(sǔn )切成片后(hòu )加(jiā )少许盐捞出(chū )后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再(zài )加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖(gài )上锅盖(gài )大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
