做(zuò )法:春笋切成(chéng )片(piàn )后加(jiā )少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切片,葱切成(chéng )段。锅烧热(rè ),倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
