做(zuò )法:春(chūn )笋切成片后加(jiā )少许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮到水(shuǐ )快熬干(gàn )的时候(hòu )加入(rù )盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
