做(zuò )法(fǎ ):春笋切(qiē )成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成(chéng )段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入少(shǎo )量清水半掩住春笋(sǔn ),盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖(gài )焖。
