做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒(chǎo )1分(fèn )钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬(áo )干的时候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上(shàng )锅(guō )盖焖。
