做法:春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水半掩住春笋,盖(gài )上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候(hòu )加(jiā )入(rù )盐(yán ),翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
