做法:春笋切(qiē )成片后加少许盐(yán )捞出后(hòu )用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清水半掩住(zhù )春笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮到(dào )水快熬干的时(shí )候加(jiā )入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖(mèn )。
