做(zuò )法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒(chǎo )1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量(liàng )清(qīng )水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮开后转(zhuǎn )中(zhōng )火。煮到(dào )水快熬干的时候加入盐(yán ),翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖焖。
