做法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水(shuǐ )快熬干(gàn )的时候加(jiā )入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖(gài )上锅盖焖。
