做法:春(chūn )笋切成片后加少许盐(yán )捞出(chū )后用清水(shuǐ )浸泡(pào ),生姜切片(piàn ),葱切(qiē )成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩住春笋,盖上锅(guō )盖大(dà )火煮开(kāi )后转中火。煮到水快(kuài )熬干的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
