做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用清水浸(jìn )泡,生(shēng )姜切片(piàn ),葱切(qiē )成段。锅烧热,倒入(rù )2勺(sháo )油(yóu ),放(fàng )入生姜、春笋、牛(niú )肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
