做法(fǎ ):春笋切成(chéng )片后加(jiā )少许盐(yán )捞出后用(yòng )清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
