做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开(kāi )后转中火。煮(zhǔ )到(dào )水快熬(áo )干的时候(hòu )加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
