做法:春笋切成(chéng )片后(hòu )加少许盐捞出后用清(qīng )水浸泡(pào ),生(shēng )姜切(qiē )片(piàn ),葱切(qiē )成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
