做法:春笋切成片(piàn )后(hòu )加少许盐(yán )捞(lāo )出后用清水浸(jìn )泡,生姜切(qiē )片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅(guō )盖焖。
