做法:春笋切成片后加少许(xǔ )盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春(chūn )笋,盖上(shàng )锅盖大(dà )火煮开(kāi )后转中火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖。
