做法:春笋切(qiē )成片后加(jiā )少许盐捞(lāo )出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右(yòu )。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水(shuǐ )半(bàn )掩住春笋,盖上锅(guō )盖大火煮开(kāi )后转中火。煮到水快熬干的(de )时候加(jiā )入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅盖焖。
