做法:春(chūn )笋切(qiē )成片(piàn )后加少许盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片,葱(cōng )切成(chéng )段(duàn )。锅烧热,倒(dǎo )入2勺油,放(fàng )入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左(zuǒ )右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
