做法:春笋切(qiē )成片后加少许(xǔ )盐捞(lāo )出后用清水(shuǐ )浸(jìn )泡(pào ),生姜切片(piàn ),葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖上锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
