做法(fǎ ):春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱(cōng )段(duàn )翻炒1分钟(zhōng )左右(yòu )。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮(zhǔ )到水快熬(áo )干的时候加入(rù )盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
