做法:春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡(pào ),生(shēng )姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽(chōu )、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖(gài )上(shàng )锅盖大火煮开后(hòu )转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
