做法:春笋(sǔn )切(qiē )成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒(chǎo )1分钟(zhōng )左(zuǒ )右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快(kuài )熬干的时(shí )候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
