做法:春笋(sǔn )切(qiē )成片后(hòu )加(jiā )少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅烧(shāo )热,倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
