做法:春笋切(qiē )成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡,生姜(jiāng )切(qiē )片,葱切(qiē )成(chéng )段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
