做法:春(chūn )笋切(qiē )成片后加少许盐捞出后用(yòng )清水浸泡,生(shēng )姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春(chūn )笋,盖上锅(guō )盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖(gài )焖。
