做法(fǎ ):春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽(chōu )、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干(gàn )的时(shí )候加入(rù )盐(yán ),翻炒均匀(yún )稍收汁时盖(gài )上锅盖焖。
