做法:春(chūn )笋切成片后加少许盐捞(lāo )出(chū )后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒(dǎo )入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮到(dào )水(shuǐ )快熬干的(de )时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
