做法:春笋切成片后加少许盐(yán )捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒入(rù )2勺油,放入(rù )生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
