做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺(sháo )油(yóu ),放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖上锅盖大(dà )火煮(zhǔ )开后(hòu )转中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅盖焖。
