做法(fǎ ):春笋切成片后加少许盐捞出(chū )后用(yòng )清水(shuǐ )浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉(ròu )片(piàn )、葱(cōng )段翻炒1分钟左右。再加(jiā )入(rù )生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻(fān )炒均匀稍收汁时盖上锅盖焖。
