做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅(guō )烧(shāo )热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中(zhōng )火(huǒ )。煮到(dào )水快熬(áo )干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
