做法:春(chūn )笋切成片后(hòu )加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖(gài )上(shàng )锅(guō )盖大(dà )火煮开(kāi )后转中火(huǒ )。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
