做(zuò )法:春笋切成(chéng )片(piàn )后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀(yún ),加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到(dào )水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁时盖上锅(guō )盖焖。
