做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量(liàng )清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开后(hòu )转中火。煮(zhǔ )到水(shuǐ )快熬(áo )干的(de )时候(hòu )加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
